Cindy also sent me a pasta salad recipe I can't wait to make...let's hope I can find some nice local produce to test this recipe out. Here's the recipe she sent:
Greek Pasta Salad
1 bag colored rotini
1 pkg. sliced turkey
5 roma tomatoes
1 cucumber
1/2 red onion
1 to pkgs feta cheese (she likes the basil tomato feta)
Greek vinagrette
Cook pasta. Rinse in cold water. Dice turkey and vegetables. Add to cooked pasta. Add feta. Mix in Greek vinagrette.
Greek Vinagrette
1/3 c. olive oil
3 T red wine vinegar
2 T lemon juice
1/2 t. dried oregano
1 t. sugar
1 clove garlic minced
1/4 t. black pepper.
I think I might try swapping quinoa for the pasta.

that balsamic vinegar sure looks fantastic! i also got a pomegranate treat this month only instead of balsamic (yum!), mine was covered in chocolate :)

Hi Laura! Thank you SO MUCH for your warm and kind thoughts of us this past week - it is so spectacular the way very dear and special folks like yourself have reached out with words of care and encouragement. It is sooo awesome - thank you! We were able to return home last night and it was an emotional moment when we turned into our neighborhood and realized we escaped essentially unscathed by the fire when less than a mile away, dear people lost their homes - everything charred to the ground. We are incredibly thankful and also sad for the 347 families who did lose their homes. We count our blessings. Thank you again, for your caring words.
ReplyDeleteThere is a little shop in Manitou Springs, The Olive Tap, that sells oodles of flavors of olive oils and balsamic vinegears - very fun store for foodies! We stopped by there last fall and sampled a few flavors - the Chocolate Balsamic was delicious! We thought it would make a great salad dressing for something different. Have a wonderful week! :-)
